To tempt your palette we are pleased to show you a taster of the type of recipe you can expect to see in the Book:
Fraser Valley Savory Sauce

I really love this sauce, you can use it with a nice grilled pork tenderloin medallions, or if you prefer a nice pork loin or chop between 1 and 1 ½ “thick. This will add exciting flavor and tenderness.

NEVER overcook your pork chops, cook them to your own preferred taste.
This sauce will also serve as a wonderful addition, which adds excitement and interest to chicken as well, the subtle flavored chicken is a great base for the savory sauce.

Ingredients:

Here is what you need,

1 cup of raspberries
½ cup of chicken broth
½ cup of refined sugar
¾ to 1 tsp of curry powder, your taste
1 tsp of cornstarch

Method:

Here is how I do it,

Take a small sauce pan (pot), combine raspberries and chicken stock and simmer for about 10 to 12 min.. SIMMER, this is not a boil. OK

When the raspberries are very tender, pour the stock and raspberries into a food sieve force the mixture completely thru into a bowl,,, I use a large spoon to rub the mixture side to side in order to pass it all thru the sieve. Kinda messy, ya, Discard the seeds and pour the bowl back into the saucepan.

Bring back to simmer, whisk in sugar, and curry, mix well, then add cornstarch and simmer 3 more mins,,,,, it will thicken quit fast, if it is too thick add a little water or chicken broth to thin.

TIP: Mix cornstarch with a tablespoon of water first before adding to recipe, this will prevent lumps.

I like to serve my plates with flare,
Pour a small amount of sauce on the plate first, then place your grilled pork or chicken on top,,, really contrasts beautifully, then garnish with some fresh berries, couple of blueberries, raspberries and a slice or two of apricot or peach,, such beautiful colors will wow your dinner guest.

You can serve, roast potatoes, wild rice or any number of starches with this sauce, As long as you do not try to mix too many different flavors together.
